Made this a couple days ago. I'm not one for being easily impressed by recipes, but this one surprised me.

Ingredients:

1 can (16 ounce) navy beans, rinsed well and drained
1 cup diced tomato
1/2 cup diced roasted red pepper
3/4 cup sliced green onion*
1/2 cup diced celery
2 tablespoons chopped fresh parsley
1 garlic clove, minced
1 package (0.7 ounces) Italian salad dressing mix
1/2 cup water
1/4 cup apple cider vinegar
1 tablespoon olive oil

*I substituted thinly sliced red onion because I had it on hand already

Step 1: Combine first 7 ingredients (navy beans through garlic) in a large bowl

Step 2: Combine salad dressing mix, water, vinegar, and oil in a jar with a lid and shake vigorously. Pour over bean and veggie mixture and toss gently. Cover, chill, and toss before serving

I've found that I enjoy this relish or salad as an accompaniment to the fatty meats that typically get served here at home. The crisp vegetables and the vinegar in the dressing does a nice job to cleanse the palette, and I end up eating more of this relish than I do anything else on the plate.
