Well if it was just a "man", then how did he use supernatural powers to dislocate his hip?
The text says..

" he touched the socket of Jacob's hip so that his hip was wrenched as he wrestled with the man."

Nothing in there about it being supernatural. Could of just been a really good wrestling move.

If it was supernatural, nothing says only an incarnation of God can do supernatural things. Moses did many super natural things. He wasn't God. It's possible this 'man' was endued with some kinda power to do it.

The text says many times in few verses it's a 'man', so that seems to be an indicator that God is trying to tell us it's a man!

And if Jacob was confused or it is "his interpretation", then how do we know if the New Testament isn't simply "Mark's interpretation" or "John's interpretation" and all completely wrong?
Well in this OT story we have the inspired text telling us FIVE times it's a man.

In the gospels the text usually matches the disciples perception of Jesus in regards to his deity and such, so we can be assured their perceptions are correct.

We know when people's perceptions are incorrect, when the text tells us so. Ie, it saying Jacob wrestled with a man five times.

In the gospel story of Jesus in Luke 24:36-38 they thought Jesus was a ghost, but the text tells us their perception was wrong.
