Firstly, I capitalized God and 'He' in your quotes. Sorry.
Just one of my preferences. Here goes!
Why did God create things such as islands? No one inhabits them.
There are approximately 180,000+ islands on the earth, and this changes as earthquakes and such happen. I don't know if God specifically created islands or if the tremors and such of earth created them as time passed. I wasn't there when God created land.
But, God has His purposes for all He does. On some of these islands, species are preserved where they have been killed off elsewhere. Some islands are inhabited, some are not. The cool thing to consider is that God knows where each one is and He knows who and what are on them and their value. That is amazing.
Why did He create so many stars and planets? Besides the fact they look pretty, I don't see why they are there. Why didn't He just make the earth and the sun?
"
Space and planets were created for God's glory. We know that stars and planets outside our solar system exist, and these, too, were created for the glory of God. A constantly expanding universe is yet another conjecture that has yet to be proven. The next star farther than the sun is over 4 light-years away, and that isn't even a measurable fraction of the size of the known universe, expanding or not."

What was the purpose of dinosaurs? If He was going to kill them, why would He create them in the first place?
God works in seasons (Ecclesiastes 3). The dinosaurs had a purpose and served that purpose and then their season passed, and so they died. Scientists can speculate as to why and how, but the point in fact remains that there is no waste in what God does or does not allow. So, He created them for a purpose and they died for a purpose, after their season had ended.
Why are there diseases such as cancer in the world?
When sin entered the world, the world and all that exists in it, fell under a curse, thus disease entered the world.
For this one, I say it's because God has a great sense of humor.
Seriously though, what do those things even do? I really just want to know why God added all these little details in life.
Sorry if I sounded a little aloof in some of these replies, but here's why: "Who is this that questions My wisdom with such ignorant words? Brace yourself, because I have some questions for you, and you must answer them. Where were you when I laid the foundations of the earth? Tell me, if you know so much. Do you know how its dimensions were determined and who did the surveying? What supports its foundations, and who laid its cornerstone as the morning stars sang together and all the angels shouted for joy?" Job 38:2-7
Though it is okay to ask God things, we must be aware that our thoughts and ways are far different from His, as God's thoughts are higher than ours and His ways are not our ways. Will we ever comprehend the majesty of such a Creator? Think of this, God is the Creator and we are His created beings. We have creativity sung into our very souls. So, we, in turn create in different ways and with different expression. So, God, being the true Creator, has more creativity than our mortal minds can begin to comprehend.
If you want to read more of God's answer to Job, it begins in Job 38 and continues through 41. You might as well read chapter 42 as well, where Job replies, "I know that You can do anything, and no one can stop You. You ask, 'Who is this that questions my wisdom with such ignorance?' It is I. And I was talking about things I did not understand, things far too wonderful for me. You said, 'Listen and I will speak! I have some questions for you, and you must answer them.' I had heard about You before, but now I have seen You with my own eyes. I take back everything I said, and I sit in dust and ashes to show my repentance." Job 42:2-6
