Olerica: Hundreds of dollars on pans? You're really serious about this. Like, it's not just a side job you do in your spare time, this is your main job.

I wish, I wish, I wish I lived close enough to pop over and buy a cheesecake...

lol... yes, it's my main job... my business. :) And I'll be fortunate if the 1200 pans I bought last me till October. It's a wonderful, awesome, amazing problem to have.

Oh.. in the event it doesn't make sense? The pans are made from paper. Speeds up the process and I'd have to make liners for the metal pans anyway.... anyway, I know what I'm doing and this is far less waste than anything else. (I used to use metal pans and hand fabricate the liners, but WOW, that's all I did a lot of the time. The business has really grown up. (By the way, did you see my return post on the oven(s)? I did pot one for you!)

Yeah I saw it but I don't have a spare $12,500 to spend on an oven right now. I would only use it once every two months anyway.

But when I'm cooking a batch of 14 to 20 loaves of sourdough bread, putting a space heater in a spare bedroom to let them rise, putting them in a standard kitchen oven four loaves at a time, timing the loaves in the hotroom so the last ones won't be deflated by the time they get around to baking... I often think how nice it would be to just stick a large batch of sourdough in a professional convection oven, let them all rise there and bake them all at once.

*sigh

Ah well... so why do you do liners anyway? What are you making that standard crisco around the sides and bottom of the pans doesn't cut it? I'm not being smart-alec, I'm sincerely curious.

I keep popping into chat hoping a group will be there because I really miss everyone... but I've been up 22 hours and it's time to throw in the towel.

Hopefully, after reading Olerica and Lynx's posts, I'll be having sweet dreams of cheesecakes and sour dough bread.

Then I'll be shaking my head at both of them when I go to the store in search of both and wind up breaking both my monetary and my calorie budget for the day.

Whoops! I misplaced a decimal. I meant $1,250. Half of $2500. But I still don't have that much money. But I still would like an oven like that.

I'm not making cake, Lynx. I'm making cheesecake. It doesn't set in the same way as cake. I can't give you more information without giving away some of my process, so you'll just have to trust me that it's the way it must be done. Anyway, I use a paper/disposable pan and the pan goes with the cheesecake. :) It becomes part of it's wrap.

And if you are doing that many loaves? You'd probably get 3 racks of 6 loaves in each oven - and by the way? The 5k was for BOTH ovens. :)

...and that's after being awake for half an hour. Would coffee need to exist if mornings weren't a thing? Why does the snooze button even exist?! My cat looks like a giant prairie dog in the dark. I reeeeally want to go back to sleep.

I think part of the struggle of being an adult is learning how to have a thick skin while maintaining a soft heart.
oh yes, this is true.

but here's the best part of learning that lesson. when you start to figure that one out, you can officially stop growing up and eschew adult status from here on out. : )

Indeed. Sounds like he came out of his comfort-zone and put some effort. This was probably done with VHS back in the days. :(

Oh Mia I was a handful I imagine alot of these goofy people in here were too...somethings we'd do just to get on the teacher's nerves like drop pencils at 12:15 or cough at 11:30 or we'd all be standing when the teacher walked in and she'd tell us to sit down and we'd sit right on the floor we were a handful she always laughed cuz she knew we were just goofs
