Glad you're saved and studying about creation.
Although there may be several ways to interpret Genesis which still remain within Christian Orthodoxy, I don't believe any interpretation that includes biological evolution can be considered orthodox, or even reasonable.
Evolution isn't tenable for many reason; I'll only mention a couple.
1. Precision and clarity of scripture:
The scripture does state, very clearly, over and over, that God "created".
And everything he created was fully developed, fully formed, and immediately existent.
This act of immediate and full creation is also shown in other passages of scripture.
God's acts of creation appear many places in scripture, over and over, and they are very simple, and clear, and without any grammatical indication they should be allegorical.
So from looking at the text, we see creation is mentioned many times very clearly, and there is nothing in the text to indicate it's allegorical. So the text is very clear.
2. Logical consistency:
There are also some very simple logical and philosophical proofs.
In science there is a logical necessity for SOME KIND of "first cause", or "prime mover".
If we recognize God as the "prime mover" who created all, and who created the vastness of the entire universe out of NOTHING... then what a SIMPLE TASK it would be for him to also create a few plants and animals!
So, theistic evolution is not only contrary to the biblical text, it's also just silly.
If you already believe in God, an all-powerful being who could create the entire universe, then he wouldn't break much of a sweat by tossing out a few plants and animals!
There are countless explanations and proofs available in virtually ALL of the sciences, as well as in philosophy and logic.
There is NO lack of science and evidence for creation... there is only a lack of people choosing to believe what they see.
Jesus even talked about how strong people's unbelief is.
Jesus said that people would HOLD to their unbelief even in the face of CLEAR & UNMISTAKABLE EVIDENCE.
Luke 16:31 "And he said unto him, If they hear not Moses and the prophets, neither will they be persuaded, though one rose from the dead."
