WARNING: I like 'em spicy, so cut back on some of the spices if you don't :)

Ingredients:
1 lb cooked shredded beef or chicken; can be precooked to save time later
1 tbsp butter
1/2 cup finely chopped onions
2 finely chopped spicy peppers
1 small can tomato sauce
2 tbsp chili powder
1 small can refried beans
1 bottle of hot salsa
Large bag of sharp shredded cheddar
flour or corn tortillas
Sliced pepperjack cheese

1. Warm beef or chicken in 1 tbsp of butter with 1/2 cup of finely chopped onions and two finely chopped chili peppers or jalapenos (the more finely chopped, the more the meat will be able to absorb the flavors it seems)
2. Stir in 1 small can of tomato sauce, 2 tablespoons of chili powder and one small can of refried beans.
3. On each tortilla, place two slices of pepperjack cheese, fill with meat mixture, roll up and place in non-stick baking pan (the cheese is pretty messy).
4. Once all of the tortillas are in the pan, cover with a LIGHT coat of salsa and tons of shredded sharp cheddar cheese.
5. Bake at 350 degrees until tortillas are slightly browned and cheese is melted.

Will try making iit next time I have the chance it.. Hopefully soon since everyone seems not to like me trying new recipes around here.. but the funny thing is.. I never really get to eat the dishes that I make for the first time because they eat it all...lol
