I made this today as a test to see if I liked it enough to have for supper. It was good or at least I thought it was.
I had to make a few changes to stick with my diet. Margarine instead of butter. Half-n-half instead of the heavy cream. I also cut out the salt entirely and let the chicken broth (low sodium, low fat) carry the seasoning. I also cut the recipe in half so I didn't have so much to store as leftovers. I still have way too much and will probably be eating on this until Wednesday or something.
