12 oz. + ground sausage, 1/2 c. chopped green pepper, 1/2 c. chopped onion, 1 tsp salt , 2 tsp. black pepper, 1/2 tsp. cayenne, 1 package large tortilla flour shells, 8 eggs , 1T. milk ,and rico's gourmet nacho cheese 16 oz. can.
Crack eggs and add milk and scramble set aside.Spray pan and start browning sausage, when almost cooked add the veggies, salt and pepper, cayenne and cook til done. Then add scrambled eggs and cook til done. (*hint allow the tortillas to sit out during this stage). Room temp. tortillas easy to roll. Allow to cool if you're not eating right away. That way you can make them up for the week. Add 4 oz. of sausage mixture in the middle and then 2 oz. of cheese on top and roll. Then can heat in microwave to melt cheese.

i start with a couple of ounces of chorizo & a hash brown on a flat top or large skillet on low/medium heat.
when the hashbrown is about half done, i chop up the hashbrown and mix it with the chorizo. in the grease from these that is by this time covering the skillet, i fry an egg, breaking up the yolk. don't want a runny burrito.

i lay some shredded cheese on a warm flour tortilla, then put the hot ingredients on top, lay down some sour cream and/or guacamole ((or some chopped fresh avocado)) next to it, add some cilantro & chopped tomato. roll & eat

I don't usually make burritos for breakfast (usually for lunch or dinner only). When I do make breakfast burritos I keep them simple:
- sautee black beans with onions and jalapeno
- scramble eggs with salt and pepper
- put beans and eggs in tortilla, top with cheese and salsa
