I want to make some mains possibly with meat and /or veges and preferably chicken (im hungry and i feel like chicken ) but whatever meat or fish i want them to feel good about it that it looks great but also tastes great. im contributing food its not all on me so just two three dishes with the budget and not feeding everyone.

-couple months until the get together - 1 night

-no vegan or vegetarians or allergies no one has these as far as im aware - however i cant eat freshly caught seafood or med-spicy curry due to gag reflex- if seafood is cooked without fresh seawater taste and/or in strong bater or sauce, condiments doesnt matter i can eat it
-brothers partner and others dont like spicy
-all adults bar one about about 11
- extended family has their preferences with food lets just say they have higher incomes/upper class so even though they can eat most dishes i guess it has to look good but not perfect
-budget umm $25 - $28 USD( $35 - $40 NZD )
-i love chicken curry, turkish kebabs are ok and salads but i still want more ideas

with salads i like nuts, fruit, cheese with it my favourite is greek salad and i love homemade pizzas with pita bread base but dont know many pizza recipes to all my kiwis out there no spagetti pizza wont do! haha

personally dont like chopping alot or fiddly work like sushi but ill slice if i have to but making sushi is out!

Missy, will the weather allow you to grill? :)

so simple yet delicious to marinate boneless chicken in Italian dressing and cook it outdoors.
you could bake it, too.

make your favorite salad, some brown rice and bread and voilà!

What about a chicken stew? I love it so much I make it all year round! If your interested I can give you the recipe. I created this recipe and have perfected it over the years. Everyone who's had it loves it!

What you'll need:

1. 8 chicken thighs which feeds about 7- 8 people, if your feeding 4- 5 people you can half the recipe.

2. 28 oz can of crushed tomatoes

3. 32 oz carton of chicken broth

4. Garlic head- you'll use about 4 to 5 garlic cloves

5. 2 Red Bell Peppers

6. 1 large onion

7. 4 carrots

8. 3-4 potatoes

9. 1/4 cup of fresh Cilantro

10. 1 bay leaf (optional)

note: The carrots and potatoes should be about the same amount when cut.

How to prepare:

1. Cut the skin of your chicken thighs and trim the fat off.

2. Season well with salt, pepper, and garlic powder( garlic powder optional)

3. Finely chop red bell peppers, onion, and cilantro.

4. Slice carrots

5. Dice potatoes and garlic

Par cook your chicken in a pan with some canola oil ( not too much oil you don't want to fry the chicken).

Pour 3 -4 table spoons of cooking oil in a stock pot or Dutch oven pot. Use medium heat.

Saute bell peppers and onions till soft.

Then add garlic and cook for a minute (make sure it doesn't burn you can always add a touch of oil).

Then add chicken broth, crushed tomatoes, and cilantro. Bring to high heat.

Add carrots and potatoes. Bring to a boil.

Then add chicken thighs. Add bay leaf (optional) bring the flame to a simmer.

Cook for 3 to 4 hrs or until the chicken is falling off the bone and the veggies are soft.

When done cooking remove the bones and bay leaf.

I'm sure you can play with this recipe and add other veggies.:) The bell peppers, onions, and cilantro are so flavorful. Also, I serve my stew with white rice. It's so good together.

I forgot to mention that while you simmer you need to cover your pot. No one wants a dry stew, ha ha. Also, when you're done cooking use some salt and pepper to your liking. :) This stew is so versatile that you can even use a refined piece of meat like beef chucks and it's delicious.

I did a chopped Greek salad for a Church lunch this week. I cut just about everything into 1/2 inch dices or slices:

Half a head of celery (cut to about 1/2 inch)
A bunch of small carrots (they were thicker, I'd have cut them in half)
2 zucchini/courgette
2 peeled and cored cucumbers
1 red bell pepper
1 yellow bell pepper
Some house-pickled red onion, but you could use fresh.
2 finely minced scallions
8 oz feta in a 1 inch dice
8 oz pitted kalamata olives

The dressing:
1/2 cup red wine vinegar
1/2 cup olive oil
about a teaspoon of fresh rosemary, mint, garlic, and two of oregano (chopped really fine... or dried)
1 tablespoon each of sugar, salt and pepper - or to taste.
Mix it up very well and then be sure to taste it. Adjust seasoning to your taste.

Mix the dressing together and set aside (preferably overnight).
Chop all of your veggies and mix them well in a bowl. Add the cheese and mix again (it'll break up more), then whisk/shake up the dressing again and add it. Stir again. :)

Serve with grilled chicken or steak or... whatever. ENJOY!

Great, ive never tried greek salad with bell pepper b4.

Did you make that? Looks good. Mine has more cilantro. It's probably cause I cook without measurements. The first time I made it, it didn't taste so good. I had to keep experimenting.
