I made dinner for my significant other tonight and thought it would be fun to share the recipes..

his favorite foods are chicken wings and homemade mac n cheese, but I make mine a little non-traditionally.

This isn't healthy by ANY means... all the leftovers are going home with him. :D

Mac n cheese:

I dont use exact measurements, so I'm estimating here...you can adjust to your taste.

1 box mostaccioli (can sub for ziti, penne, corkscrew, etc)
chopped ham (can be left out if you prefer)
tablespoon salt
1 cup of lactaid (can sub regular milk, evaporated milk, half/half)
2 to 2.5 cups of shredded cheese - I shredded gouda, gruyere, and white cheddar
half a cup of mayonnaise
butter
teaspoon minced garlic
.25 to .5 cup chopped onion
1 goya chicken boullion packet or cube
tsp mustard

preheat oven to 350.

Add the tablespoon of salt to a pot of water and bring to a boil.
Add pasta and ham and cook until pasta is al dente. Drain and set aside.

In a sauce pan, melt 2ish tablespoons of butter and add the chopped onion. Keep it on low heat and cook the onions until they are almost transparent.

In a separate bowl, whisk milk and mayonnaise, and gradually fold in the garlic, boullion, mustard.
fold in the butter/onion mixture
add a cup of the shredded cheese

pour the cheese/milk mixture from the bowl to your pasta and mix everything together.

put it in a baking dish and use the last cup of cheese to sprinkle on top

cook covered in the oven for 40 minutes at 350, and then uncovered for 5-10 minutes until the top is brown.


Oven baked Wings
:

raw chicken wings
black pepper
adobo powder
goya sazon
tblespoon olive oil
blueberry preserves.
soy sauce

preheat oven to 400

Rinse/clean raw chicken wings thoroughly...(I like to pour boiling water and a little bit of vinegar on raw chicken, and THEN I rub with limes)

put the wings in a bowl and add the olive oil, black pepper, adobo powder, and sazon. mix until everything is coated well.

place the wings in the oven - make sure they're not overlapping each other and bake for 40 minutes at 400. turn them over and bake for another 15-20 minutes until brown.

in a pan, heat up about half a cup of soy sauce and whisk in about a cup of blueberry preserves.

take the wings out of the oven, place them in a bowl and drizzle the hot soy sauce/blueberry preserve mixture over the wings.

serve and garnish with chives or green onion.


I served everything with a simple tomato/cucumber salad tossed in olive oil and vinegar on the side.

Does that Goya boullion have MSG or yeast extract that you know of? I guess I could just look it up if you don't know off hand(the internet!). I don't think I've seen that brand in Canada but I have been on the look out for some MSG free stuff.
