Sweet Potato Casserole
Ingredients:
5 large sweet potatoes
½ stick butter
8 oz brown sugar
1 tbs all purpose flour
2 tsp cinnamon
1 tsp nutmeg
¼ cup pecans, chopped
small marshmallows as needed
Preparing:
1) Peel/slicepotatoes in rounds of your choice and boil for 35 minutes.
2) Take ½ cup of water before draining from boiledpotatoes and add 1 tbs flour to make roux. (you will use roux to pour overpotatoes before baking).
3) Drain rest of potatoes.Layer ½ half of potatoes in the bottom of a baking pan, sprinkle ¼ bag of brownsugar, ¼ stick butter cut in slices. Sprinkle cinnamon and nutmeg over.
4) Layer other ½ and repeatstep 3.
5) Pour roux overpotatoes. Mix well with spoon
6) Ready to bake. Let bake for 1-1 ½ hour depending on thetexture you like.
7) Top with pecans, thenmarshmallows. Let bake 20 min. or until marshmallows brown.
