I'll admit I'm a sucker for tuna salad. However, I don't like mayonnaise or miracle whip so, through trial and error, I have created my own recipe for tuna salad.

Ingredients:
- 1 small (5 ounce) can of tuna in water
- 1 teaspoon of lemon juice
- 1 tablespoon of olive oil
- 1 tablespoon of dill relish
- 1 teaspoon of dijon mustard
- 1 tablespoon of minced red onion
- 1 tablespoon of minced celery
- 1 tablespoon of chopped parsley
- 1 tomato, sliced
- shredded lettuce
- 1 dash of black pepper (optional)
- 4 slices of wheat bread
Directions:
- Drain and flake the tuna.
- In a bowl, combine lemon juice, olive oil, dill relish, dijon mustard, red onion, celery, parsley and black pepper
- Add tuna to the bowl ingredients and mix well
- Spread the mixture over two slices of bread
- Top each sandwich with tomato slices and shredded lettuce
- Toast each sandwich in a toaster oven (optional)
