Did Jesus ever tell us that we no longer need to keep the law of Moses?

If the law is done away then so is the knowledge of sin, for by the law is the knowledge of sin.
A person who comes to christ already has that knowledge of sin,

Its like using instructions to build a model, then after the model saying you still need the instructions

You only need the instructions if thr model is not yet finished.

So if you think you still need law. Evidently the purpose of the law has not yet been accomplished in your life, which should scare you.

I`m not sure what you are asking. The Bible says the Sabbath begins at sundown so I assume you want to know about Sabbath keeping?
It`s not a sin to observe the Sabbath but it`s a choice.

Some observe the Sabbath and then go to church on Sunday. I think thats great if you can do it.

We do away with the law and then we dont know what sin is?
How about:-
1. If it makes your neighbour unhappy it is a sin against man.
2. If we disrespect God, it is a sin against the Almighty.

36 He that believeth on the Son hath everlasting life: and he that believeth not the Son shall not see life; but the wrath of God abideth on him.

That is excellent for our spiritual well-being, but what about the relationship with our neighbour?

9 He that saith he is in the light, and hateth his brother, is in darkness even until now.

10 He that loveth his brother abideth in the light, and there is none occasion of stumbling in him.

11 But he that hateth his brother is in darkness, and walketh in darkness, and knoweth not whither he goeth, because that darkness hath blinded his eyes.

I wouldn't dare talk about our neighbours round here. (grin) I'm looking for a universal law that could apply to anyone of all faiths or no faith that would replace the hundreds of OT laws many of which are not applicable today, for example going to Synagogue on Saturday.

I cant help you with any of that. I believe Jesus is the only path.

Now we know that whatever the law says, it says to those who are under the law, so that every mouth may be silenced and the whole world held accountable to God.

(Indeed, when Gentiles, who do not have the law, do by nature things required by the law, they are a law for themselves, even though they do not have the law, since they show that the requirements of the law are written on their hearts, their consciences also bearing witness, and their thoughts now accusing, now even defending them.) This will take place on the day when God will judge men’s secrets through Jesus Christ, as my gospel declares. Romans 2:14-16

If the law is written in a Gentiles heart, does he have to keep it? If not, where in scripture can we find a verse that says that we must not keep it or that we must erase it from our hearts?

Who is in your heart? Is he leading you not to keep the law that is written in your heart? Is it what he desires?

...in order that the righteous requirements of the law might be fully met in us, who do not live according to the sinful nature but according to the Spirit. Those who live according to the sinful nature have their minds set on what that nature desires; but those who live in accordance with the Spirit have their minds set on WHAT THE SPIRIT DESIRES. The mind of sinful man is death, but the mind controlled by the Spirit is life and peace; the sinful mind is hostile to God. It does not submit to God’s law, nor can it do so. Romans 8:4-7
