They were not to be eaten and their carcass was not to be touched.

They were not allowed to eat fish without fins and scales.

Ch. 12
If a woman gives birth to a boy, she shall be unclean for 7 days. The 8th day the child is to be circumcised. The woman goes through 33 days of purifying. During that time, she may not touch any hallowed thing or come into the sanctuary.
If she gives birth to a girl, she shall be unclean 14 days, and the days of her purifying will be 66 days.
After her days of purification, she shall make offerings and she shall be cleansed.
I watched an interesting sermon on this a few years ago. The preacher said that this is done for the woman's benefit. It takes more out of the woman to have a girl than it does a boy, thus the Lord gives her more time to recover. He gives her twice as much time to recover. These laws weren't against the woman, they were to help the woman.

With the building of the tabernacle, Israel had a centralized place of worship. Therefore, they were not allowed to offer sacrifice in any place or in any way they pleased. If they disobeyed, they would be cut off from among the people."
