Hey guys, this is the banana bread recipe that I used for my first ever baking exploit.

Banana bread is easy to make, with inexpensive ingredients .... and it's the perfect way to get rid of overripe bananas.
You can eat it for breakfast too (for the sugar rush)


It's absolutely delicious and so easy!

Banana Bread Recipe


  • Prep time: 10 minutes

  • Cook time: 1 hour
  • Yield: Makes one loaf.

No need for a mixer for this recipe! Clean-up is easy too, if you want, you can mix everything in one bowl.
The best bananas to use for banana bread are those that are over-ripe. The yellow peels should be at least half browned, and the bananas inside squishy and browning.


Ingredients


  • 2-3 very ripe bananas, peeled
  • 1/3 cup melted butter
  • 1 cup of sugar (can easily use 3/4 cup, or drop it down to 1/2 cup if you want it less sweet)
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups of all-purpose flour

Method

Preheat the oven to 350°F (175°C), and butter a 4x8-inch loaf pan.
In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir the melted butter into the mashed bananas.
Mix in the baking soda and salt. Stir in the sugar, beaten egg, and vanilla extract. Mix in the flour.
Pour the batter into your prepared loaf pan. Bake for 1 hour to 1 hour 10 minutes (check at 50 minutes) at 350°F (175°C), or until a tester inserted into the center comes out clean.
Remove from oven and cool completely on a rack. Remove the banana bread from the pan. Slice and serve. (A bread knife helps to make slices that aren't crumbly.)

Chef's Experience-


Do check the bread before the 1 hour recommended time. I did mine around 40 and then let it bake more till 50.

Be careful not to overdo it, or your bread shall lose it's moisture!!

Also, I used 1 cup of sugar, the recipe says to alter this according to taste. 3/4 cup should be more than enough.

If you can try, try it out with brown sugar or a half and half mixture of both. I think it enhances the banana flavour.

I let mine cool for around 10 minutes and the thing slid out beautifully.

boy, Rachel, your banana bread is far more beautiful than mine. :)

this is really similar, if not identical, to the one Gram and mom made.
for whatever reason (to avoid over brownness?) they add some lemon juice to the mashed bananas.
and walnuts or pecans, chopped, to the batter.

my trouble is having people leave the bananas alone till they're overripe!
but you can peel them, if you have an abundant supply, stick them in a freezer bag,
and save them for whenever you'd like to use them.

(maybe, so my horrible kids won't eat them, i should try hiding bananas under the sofa?? lol)

I did use walnuts, but I didn't add lemon juice to the bananas - I think that's a great tip.


I find that the next day, that is today, my banana bread texture is kind of squished -__- and not the fluffy bread texture that I think it should be.

I think the problem is my bananas. I used those baby-ish bananas and not the cavendish ones :p.


Not a good idea.



I don't freeze bananas but I think my mom and dad had the same problem with me. I would be fussy about fruits and then all these bananas would become overripe and in summer, there will be those fruit flies around :D...

Freezing them is a good idea!

I like banana bread thank you for sharing this, it looks delicious. I was wondering if you also have a recipe for zucchini bread because that is my ultimate favorite, especially while it is still warm. :)

Oh wow, I've never tried zucchini bread...


I'll see what I can do to try this out... Allrecipes has a great repertoire of such stuff.


They have a video for this too. I always prefer to see Youtube videos before I begin something..
