I loved grilled chicken sandwiches. I use an indoor smokeless grill and put a chicken breast on it. When it's done I make a sandwich with mayo, lettuce and pickles. Sometimes I'll even add a couple of slices of bacon. I use colby jack cheese.

HAMBURGER AND BEANS

(how to)

1 lb Ground Round
2 cans Bush Beans (flavor of your choice)
1/2 can diced Tomatoes (drained)
1 TBS diced Red Onion
1/4 cup Mustard
1/2 cup Ketsup
1/4 cup Worcestershire Sauce
1 cup Shredded Cheese (your choice what kind)

Crumble up Ground Round and brown in skillet or 2Qt pan. Once Burger is cooked, add beans, tomatoes, red onion, mustard, ketsup, and worcestershire sauce. Stir well, until completely mixed. Cover and let cook on low heat for 10 to 15 minutes, or until all ingredients are nice and hot.

Take 1 or 2 slices of a bread you like, and put them on a plate. Cover the bread with the Burger and Beans. Top it all with a good covering of the Shredded Cheese. I also like to add a TBS of Sour Cream, and a few slices of Avacodo.

Whole meal should be done in 30 minutes.

I’ve been very aware lately of how much washing-up I make, just cooking for one, as you know lol.
Psalm 104 says food strengthens the heart. I’ve noticed how a nice meal can cheer me up.
So what’s your favourite?
Mine is fried eggs, home-made fries and plum tomatoes out of a tin 🥰
(with plenty of salt & vinegar).
Not homemade...but it sure is easy!

Cereal!! Haha!

Lean Cuisine + Microwave. And, there are some good ones.

tortilla on microwave safe plate light taste olive oil ...enough to coat tortilla, nuke 33 secs. crack egg on top sprinkle cheese, celery seeds, anise seeds, chopped onions variation with flour tortilla and chili from can or chicken canned with cheese like pizza but messy nuke for 44 secs or ? other condiments soy sauce, balsamic or malt vinegar. Easy breezy I leave the plate 'dirty' under a paper plate till build up of oil too much....maybe three days till serious cleaning. Egg & cheese & celery salt is nice too on corn or flour

I put a chicken leg uncooked in med pot filled with purified water add rice or lentils. I add tomato, garlic, parsley and any variety of veggies and spices I want. For a full meal add 1 cup of rice then break down the chicken leg meat into it. Pretty reasonable $$ wise too.

Has nobody mentioned pot roast? The crock pot is one of the best inventions ever made. Toss a roast in the crock pot, add liquid and seasonings, set it running and go on about your business. At the end of the day you have a great supper waiting for you.

PS......Make sure to break the yoke by stirring the egg with fork or knife. otherwise it will explode when nuked and make a mess.

The secret to ultra-smooth homemade chocolate pudding is an immersion blender - a spinning blade on a stick, my best friend in the kitchen. Blend it before cooking and blend the crap outta it after it cools.

Actually that's what my 20+ year old immersion blender did last Tuesday. It crapped out, right in the middle of the last blending. Had to buy a new one.

This week's batch of pudding was a bit coarse, not as smooth as I prefer. Still edible though.

In the U.S.A., we use the phrase 'comfort food' to describe "cheer me up" meals.

My favorite home-made easy meal is Texas Tamales covered with turkey chili. YUM

Okay - it is not entirely "home-made" - but, it is easy to prepare - and, quick if using a microwave oven.

(Texas Tamales is a brand name.)

Never seen them here in Tennessee. All we have is Hormel. If you've never tried Hormel tamales... Don't.

I'm gonna assume Texas Tamales are at least a bit better. Anything with Texas in the name had better be good or change its name real fast.

I ate many Hormel tamales when I was a kid growing up.

Good. It's about time SOMEONE put them to shame. Hormel makes good beans and decent chili, but their tamales are shameful.

What on earth is a tamale? I clicked on it and it looks like the thing corn is wrapped in. Is that correct??
