What is your favorite small game?

The Lord provided a groundhog for the freezer. After I process this one, I need to get the other one that visited my back yard last night. Those who haven't tried it, will probably like the flavor. They are vegetarian and shouldn't turn you away from trying something new. I consider it my favorite because the taste is not strange, but unlike typical store bought feed lot livestock, groundhog actually has flavor and I consider it a delicacy. I think that's due to their varied diet, unfortunately that includes garden vegetables.
At least we can get something back for our loss.

For those who are interested in trying wild game, the procedure is pretty much the same.
Once you field dress it and clean out the intestines, the video starts in the kitchen prep. If you need a video showing the previous steps, let me know.

The first requirement is a sharp knife.
The second is a good size cutting board to provide plenty of space to work.
Take your time and find the scent glands.
The negative experiences that most people have with gamey taste is usually because they didn't remove all of the scent glands, or because they left the fat layer on.

I have not tried this guy's recipe at the end, but you can use any that you would try for beef, pork or chicken and it should be fine. Groundhog is a versatile meat that has a flavor resembling beef more than squirrel IMHO.

I have never tried it but would give it a chance. I like trying new foods as long as it's not spicy.

I went to a Chinese buffet once. They had frog legs as a special. I had grabbed a couple and had noticed people staring......not a big deal. They were very good so I went back and grabbed 6 more. As people where really staring at me, I made a pair hop on my plate then bit right into them. I was laughing so hard at some of the reactions I saw lol. But yeah frog legs are good 🧐👍

I've tried frog legs at the china buffet too.
Being allergic to chicken they sure make tiny chicken substitutes though. Then I remembered that my first exotic pet as a little boy was a tree frog. Now I see them like most do dogs. Lol

Like all amphibians and reptiles, frogs are not kosher. That's not why I would not eat them, though. Just, ew. LOL

Same for a lot of what are considered "delicacies" in certain cuisines. That would include groundhog .;)

Joy of Cooking apparently has a groundhog recipe... or did.

I thought by thread title small game was something else .:giggle:

Well I'm really not a sea food kind of fellah but out side of that I'd try some random things . Snake is next on my list. Rattle snake and an anaconda would be neat.

I like cod... but no shellfish or shrimp or anything like that. Snake is not on my to-do list either .:unsure::LOL:

My husband gave me frog legs the first time I tried them by removing the meat and not telling me until after I said "yes, I liked it"
so the next time we went I grabbed my own frog legs and where we sat had a picture of frogs hanging by our table. I sat there playing with the legs while I ate everything else on my plate and by the time I got around to them I just couldn't bring myself to eat them. I had them in my mouth, but then the picture on the wall staring back at me.... I just couldn't swallow :LOL:
I don't know if I could give them another try now 🤷

No... though many years ago I had turtle soup, and also a goat stew (not at the same time) .:D

I was visiting a sister on Grand Cayman Isalnd...

My grandmother could cook just about any game and make it a delicacy. She drew the line at snakes. If we wanted to cook a snake, we had to take it to the back of the field.
