31 If I bear witness of myself, my witness is not true.

But I have greater witness than that of John: for the works which the Father hath given me to finish, the same works that I do, bear witness of me, that the Father hath sent me.

He's talking about the Two Witnesses of Revelation and the Holy Spirit.

In John 5, Jesus' detractors saught to kill Him, "because He not only broke the Sabbath, but also said that God was His Father, making Himself equal with God" (Jn 5:18). He followed up on their desires to kill Him by giving a full throated defense of His diety, His authority to pass judgement, His intimate personal relationship with the Father, and His ability to give eternal life to whomever He wishes. And He offered several witnesses that corroborate His claims...
  • Jesus' testimony about Himself corroborated by the testimony of:
    • John the Baptist,
    • Jesus' works,
    • The Father Himself, and
    • The Scriptures
These witnesses were and are for the purpose of convincing people to believe in Jesus so they may obtain eternal life from Him who is the giver of eternal life...

24 “Most assuredly, I say to you, he who hears My word and believes in Him who sent Me has everlasting life, and shall not come into judgment, but has passed from death into life. 25 Most assuredly, I say to you, the hour is coming, and now is, when the dead will hear the voice of the Son of God; and those who hear will live. 26 For as the Father has life in Himself, so He has granted the Son to have life in Himself, 27 and has given Him authority to execute judgment also, because He is the Son of Man. (Jn 5:24–27)​

The first witness was true. Read the first part of the verse as well: "IF I bear witness of myself, my witness is not true" But Jesus did not bear witness of Himself only, there is another one that beareth witness of Him.

The NASB does a good job of rendering the verses in question. In verse 31, Jesus uses words which emphasize the word "I". Literally, He said, "If I I testify about myself...". NASB renders that language as, "If I alone testify about...".

31 “If I alone testify about Myself, My testimony is not true.
32 “There is another who testifies of Me, and I know that the testimony which He gives about Me is true.

Most modern translations capitalize pronouns the translators think relate to God. I tend to agree with them in this case. Taking that approach, we can easily conclude that in verse 31 Jesus is speaking of Himself and in verse 32 He is speaking of God the Father or perhaps the Holy Spirit.

The point He is making is that people need to find a way to trust what His is saying about Himself as the judge of the world and its Savior. And He is telling us that there are many other witnesses that corroborate what He is saying. He gave this list to help people overcome their unbelief and put their trust in Him.

On another occasion, he stated this in another way...

37 If I do not do the works of My Father, do not believe Me; 38 but if I do, though you do not believe Me, believe the works, that you may know and believe that the Father is in Me, and I in Him. (Jn 10:37–38)​

In other words, He told them, "If you don't believe what I'm telling you is true, just look at the miracles I am performing. That should be proof enough for anyone to overcome their unbelief of who I am."

18 Then answered the Jews and said unto him, What sign shewest thou unto us, seeing that thou doest these things?

19 Jesus answered and said unto them, Destroy this temple, and in three days I will raise it up.

20 Then said the Jews, Forty and six years was this temple in building, and wilt thou rear it up in three days?

21 But he spake of the temple of his body.

With the word of our Lord Jesus regarding TEMPLE.

The 1st witness is what a man's understand of Temple (means the Literal Temple or Structure that built forty six years) which is NOT TRUE.

The 2nd witness is the revelation of The Father on TEMPLE which is the Body of Our Lord Jesus Christ and that is the TRUE.

I think Jesus is referring to the law of Moses, specifically Deuteronomy 19:15, which says (NIV):
"One witness is not enough to convict anyone accused of any crime or offense they may have committed. A matter must be established by the testimony of two or three witnesses. "

The first witness cannot be relied upon, even if it is true. How can we know that the first witness is true? The Biblical principle is that we need at least two witnesses. So the first witness is necessary, but is not enough to establish the truthfulness of a claim. The same principle is mentioned in Matthew 18:16, 2 Corinthians 13:1, 1 Timothy 5:19, and Hebrews 10:28.

MATTHEW 16:5-12

7 And they reasoned among themselves, saying, It is because we have taken no bread.
8 Which when Jesus perceived, he said unto them, O ye of little faith, why reason ye among yourselves, because ye have brought no bread?
9 Do ye not yet understand, neither remember the five loaves of the five thousand, and how many baskets ye took up?
10 Neither the seven loaves of the four thousand, and how many baskets ye took up?
11 How is it that ye do not understand that I spake it not to you concerning bread, that ye should beware of the leaven of the Pharisees and of the Sadducees?
12 Then understood they how that he bade them not beware of the leaven of bread, but of the doctrine of the Pharisees and of the Sadducees.

LEAVEN
1st Witness is what Man's understand about leaven is for BREAD which is NOT THE TRUTH
2nd Witness is God's Revelation about leaven and it means WRONG DOCTRINES which is THE TRUTH
