Second, I am not Catholic so I don't have a horse in this race. But if they have died then I don't think it matters much to them whether or not we consider them official saints according to the rites of any church.

I agree. "Saint" in the Bible is never used as a title before somebody's name. It is a word used to refer to all Christians. For example, when Paul began his epistle to the Ephesians like this:

he didn't mean that he was addressing a special class of super-Christians. He was writing to all the Christians in Ephesus. The Bible says absolutely nothing about canonizing saints.

Scripture forbids us from assigning spiritual plots or conspiracies to entire peoples (Exodus 23:1; Titus 3:2). The Pharisees were a first‑century religious sect — not a modern ethnic group, not Israel, and not a timeless enemy of Christianity.
Christians must not interpret political tensions between nations as spiritual battles between good civilizations and evil civilizations. Jesus said, “My kingdom is not of this world” (John 18:36). That means Christianity is not tied to geopolitical blocs, cultural alliances, or national rivalries.
Scripture commands us to pray for all nations (1 Timothy 2:1–2), honor all people (1 Peter 2:17), and avoid foolish controversies (Titus 3:9). We do not assign prophetic meaning to political conflicts, nor do we claim that one nation is the defender of Christianity while another seeks to destroy it.
The gospel does not belong to Philistea, Israel, Iran, Russia, or any earthly nation. It belongs to Christ alone. And Christ calls people from every nation to Himself (Revelation 5:9)

Christ’s allegiance is not to earthly governments.
He came to:
save sinners
call disciples
establish the church
inaugurate the kingdom of God
defeat death
reconcile humanity to God
Not to endorse modern political causes.
