Sadly for me, I have to eat gluten & egg free. Because of this, I make pancakes using rice flour (at times, I will add some GF corn meal). I will add a t spoon of vanilla, 1/3 cup of honey, ginger powder, cinnamon. Give it a good mix and let it rise for a few minutes.
Put a nice helping of it onto a well buttered pan and within minutes you have a delicious and filling breakfast.
