"In a town where barbecued meats and chicken fried steaks have long been the norm, it is not surprising to find high rates of diabetes, heart disease, obesity, and cancer. In his five terms as mayor, Ed Smith has been challenging his community to overcome these statistics to live longer, more healthy lives.
When Ed Smith was in his late forties, he began to notice that many of the people in his hometown of Marshall, Texas, were dying from America’s number one killer, heart disease. In 2008, Smith had a cancer scare. Looking back at his family history, Smith realized that he had a heightened risk for heart disease, as well as cancer, and with his own cholesterol at 220, he realized it was time for a change. He began reading The China Study by Dr. T Colin Campbell, and before he even finished the book,

With his interest piqued, Smith and his wife Amanda traveled to Washington, D.C., on business and decided to stop by PCRM to speak with its president and founder, Neal Barnard, M.D. The Smiths took part in various lectures, meetings, and events that discussed how a plant-based diet can help prevent and reverse heart disease.
Smith continued to become more involved in the plant-based community, and he learned about Rip Esselstyn, a firefighter at Engine 2 in Austin who helped his firefighting colleagues adopt a plant-based diet and watched their cholesterol plummet as a result. Inspired by his story, Ed Smith contacted Esselstyn who arrived in Marshall and challenged its local fire department to take part in a 28-day whole-foods, plant-based diet. The Assistant Fire Chief lost 35 pounds and got off insulin shots, and the Fire Chief lost 20 pounds and got off his blood pressure medications. Next, Mayor Smith wanted to challenge the entire Marshall community and hosted ......"
