I had about 4x2x2 portion of raw pork loin and 3 slices of bacon. Chopped them into 1/2-3/4 inch pieces. I coarsely chopped a small red onion and put that into a medium saucepan with the bacon to start cooking it. When it got good and oily I added the pork loin and cooked it with some freshly crushed peppercorns until the loin was lightly browned. Then I added in 1 chopped yellow pepper, a package of Hi-Vee brand (generic) chili seasoning and added in about 1/2 Tbsp (or more) of cumin and 1 Tbsp (or more) of chilli powder. I stirred it together and cooked it a bit, then added a quart of home-canned tomatoes (the seal had broken on them and they had to get used). Just stuck the lid on and put it on to simmer on medium low and then low for a while and forgot about it while I cleaned the kitchen and made the cornbread.
Cornbread:
I used this recipe but used almond milk instead of regular milk since we are out of cow's milk. With honey the finished cornbread tastes like blueberries. lol
