why is the devil bound if there are no humans on earth he could influence?
1. The Earth Is Desolate After the Second Coming
At the beginning of the 1,000 years, Jesus returns and takes the righteous to heaven. The wicked are slain by the brightness of His coming (2 Thessalonians 2:8; Revelation 19:21), and the earth becomes “a desolate wilderness.”
“The earth is emptied of its inhabitants. The curse is upon it, because of the transgression of God's law. The whole earth appears like a desolate wilderness. The ruins of cities and villages destroyed by the earthquake, uprooted trees, ragged rocks thrown out by the sea or torn out of the earth itself, are scattered over its surface”.​
This desolation is echoed in Jeremiah 4:23-26, which describing the earth as "without form and void."

2. Satan Is Bound by His Circumstances
Satan’s “binding” is not with literal chains, but by a chain of circumstances.
“Here is to be the home of Satan with his evil angels for a thousand years. Limited to the void earth. It is in this sense that he is bound”.​
There are no living humans for Satan to deceive—his primary work is halted. He is “shut up in the bottomless pit”, which is identified with the earth in its chaotic, abyss-like state (Revelation 20:1-3).

3. Satan Is Forced to Contemplate His Defeat
This is a time of enforced inactivity for Satan:
“For a thousand years, Satan will be confined to the earth, to behold the results of his rebellion against the law of God. For a thousand years he can enjoy the fruit of the curse which he has caused”.​
This is a period of isolation and reflection—not repentance—on his rebellion, devoid of opportunity to tempt or destroy.

4. The Saints Judge During the Millennium
While Satan is bound, the redeemed are in heaven judging the wicked:
“During the thousand years between the first and the second resurrection, the judgment of the wicked takes place... At the close of the one thousand years, Christ again returns to the earth” (see also Revelation 20:4).​
This phase allows the saints to examine the records of those lost and affirm the justice of God’s judgments.

5. Release and Final Destruction
At the end of the millennium, Satan is “loosed” for a short time (Revelation 20:7) when the wicked dead are resurrected. He once again deceives them into attacking the Holy City, but this is his final act. Fire comes down from God and devours them—this is the final, eternal destruction (Revelation 20:9-10).

I also know there are those that say Jesus is lord yet they do not know Him and I wonder does He know them. Saying Jesus is lord .. so .. does not mean were saved.
How do you make this statement fit with this verse? :

1 Corinthians 12:

3 Wherefore I give you to understand, that no man speaking by the Spirit of God calleth Jesus accursed: and that no man can say that Jesus is the Lord, but by the Holy Ghost.

So gentile Christians are an earthly kingdom presently ruling the world, thereby preventing Israel from self-governance?

Nope.

Israel is self-governing now, today. The times of the gentiles FOR THEM is now over.
However, there yet remains many prophetical fulfillments for them, including the Second Coming and the "true" and final regathering that follows.
There is no 'FOR THEM' in Bible prophecy - the 'times of the gentiles' is defined by God in scripture for the whole world for the time span that it represents. And, according to Bible prophecy, it will in fact end at the Second Coming of Christ.

The "true" and final regathering, as you put it, is actually the first-and-only-and-actual biblical establishment of the ['new'] nation of Israel for the Millennium.

No - right now He is at the right hand of the FATHER on HIS throne.

What you are referring to takes place during the Millennium - the 1000-year reign of Christ - His physical presence on the earth.

1 Corinthians 15:

20 But now is Christ risen from the dead, and become the firstfruits of them that slept. 21 For since by man came death, by man came also the resurrection of the dead. 22 For as in Adam all die, even so in Christ shall all be made alive. 23 But every man in his own order: Christ the firstfruits; afterward they that are Christ's at his coming. 24 Then cometh the end, when he shall have delivered up the kingdom to God, even the Father; when he shall have put down all rule and all authority and power. 25 For he must reign, till he hath put all enemies under his feet. 26 The last enemy that shall be destroyed is death. 27 For he hath put all things under his feet. But when he saith, all things are put under him, it is manifest that he is excepted, which did put all things under him. 28 And when all things shall be subdued unto him, then shall the Son also himself be subject unto him that put all things under him, that God may be all in all.

Be careful to understand the context.

Psalms 110:

1 The LORD said unto my Lord, Sit thou at my right hand, until I make thine enemies thy footstool.

Mark 12:

36 For David himself said by the Holy Ghost, The LORD said to my Lord, Sit thou on my right hand, till I make thine enemies thy footstool.

The highlighted words in this color refer to the Father.
The highlighted words in this color refer to the Son.
The highlighted words in this color refer to David.

It is the FATHER - on HIS throne - currently reigning (as He always has) - while making Christ's enemies Christ's footstool.

Christ will reign on His throne on the earth for 1000 years.

I just see the whole "pre-trib rapture/future to us ", belief to be so wrong on so many levels that it's becoming more dangerous by the day.
I agree that the pre-trib rapture view is not biblical - and, that it certainly can be 'dangerous' to those without proper discernment and understanding of Bible prophecy.

If you are one of the people who believes that the gathering of jews in Israel today is a prophecy fulfilled, I want to ask you a few questions:

1. Which verses talk about this gathering? The ones I see are all connected to the second coming of Jesus like Isaiah 11, wolf lying with the lamb etc.

2. Did the times of the gentiles mentioned in Luke 21 end in 1967 when the jews gained control of Jerusalem? If they did, what time are we living in now? Times of the jews?

In terms of Israel being a sovereign self-governing nation I think it has ended. Furthermore they certainly will be building a Temple on the temple mount location, the true location of course being further south from the Antonia fortress (which most Jews and muslims erroneously believe to be the location) in the city of David which is Israelite territory today.

Acts 21 and 22 and Josephus concur on this BTW.

So the end of the times of the gentiles is a bit of a relatively short process before it is fully manifest, but it is over IMO.
