Can you blaspheme in private? In other words if you swear at God etc alone is that blasphemy or do you need witnesses? Also can you blaspheme in your mind?

And he said, That which cometh out of the man, that defileth the man. For from within, out of the heart of men, proceed evil thoughts, adulteries, fornications, murders, Thefts, covetousness, wickedness, deceit, lasciviousness, an evil eye, blasphemy, pride, foolishness:All these evil things come from within, and defile the man. from Mark 7:20ff

as one becomes an adulterer simply by thinking of/ lusting for a woman, I'd say yes, you can blaspheme in your mind.

Blaspheming the Holy Spirit is knowingly, willfully, and, purposefully attributing the works of God to Satan. Is this what you have done in your mind?

No, I have not done it willfully and purposefully.
Then it's a sin of ignorance /foolishness and totally forgiveable. And/or comes under the category of temptation rather than sin.

At least at the time I didn't know I just recognized it as being severely offensive and perhaps blasphemy against the Holy Spirit 18 days later.

For example sometimes in my head I might think stuff like God is evil for example it'll just pop up out of nowhere and then I will say in my head NO God is GOOD! and I will have internal battles with myself and I will try to blot out the negative thoughts in my mind but they still happen and I cannot control them, this may be due to my mental illness obsessive compulsive disorder will God forgive me?

Yes it's your illness doing that not yourself. God's probably already forgiven you so just move on from it.
