Substitue:
Pita chips instead of corn chips
Garlic Hummus instead of beans
Fresh Mozzerella instead of cheddar
Ground or grilled chicken instead of beef
Light Balsamic vinegarette instead of salsa
or to make it vegetarian use sauteed red and yellow peppers and yellow squash or zucchini instead of chicken.
Put your chips on a plate, add your cheese and microwave for about 1 1/2 minutes. Top it with your hummus, chicken/veggies, and vinegarette. It's delicious and low in fat and calories!
