Ingredients:

instant mashed potato
fat free sour cream
margerine
Philadelphia Garden Vegetable Cream Cheese (I use the low fat variety)
bacon bits (optional)
spike seasoning (or any seasoning you like on your potato. You may not want to use salt since sour cream, margerine and cream cheese contain a certain amount of salt)
boiling water

Directions:
Follow directions on box for making mashed potatoes.
Substitute fat free sour cream for the amount of milk indicated on box directions. Put instant mashed potato in a container. Add sour cream, amount of margerine indicated and the same amount of cream cheese as margerine. Add seasonings and bacon bits if desired. Add boiling water. Stir with spoon until instant potato is well moistened and completly blended. If it seems a little dry you can add a small amount of milk.

You can use this as a side dish and serve it cold, (mashed potato salad) or heat it up in the microwave when the rest of your dinner is about done, or you can put the mashed potatoes into an oven safe dish that has been well coated with cooking spray on the bottom and sides. Cook in 350 degree oven for 30 minutes. You can also use this for the topping on shepherd's pie.
