this is a recipe my mom made up on the spot a few years back and i LOVE it! =] I could pretty much eat it everyday! ha ha! and its really easy, great for lazy or busy ppl! ^_^

Easy Chicken Enchilada Casserole
(can be made without chicken, add refried beans to the top after pouring into
casserole, top with cheese then bake)
-green enchilada sauce, 1 Lg. can I use mild
-chicken-cooked 2-4 cups shredded
-tortilla chips -1 bag (10 oz. or so ) (larger is fine, may need more
liquid)FINELY CRUSHED-
-cheese-shredded-8 oz- RESERVE ONE CUP CHEESE FOR TOP OF CASSEROLE
Cream of (any) mushroom soup plus up to 3/4 can of milk
OR
about 1-1/2 or so cups cream or half and half ( or just milk)
1-2 cups cooked rice, if you have it
OTHER ADDITIONS-add to your family's liking
-vegetable, any you like, about 2-3 cups-can be raw, just adjust cooking time
for that- Frozen is great-
-Onion, 1/2 cup chopped
-celery, 1/2 chopped
-canned green chilies, 1 sm. can, chopped
-canned beans, kidney, black, etc.
toppings
-sour cream for topping
-sliced olives for topping

METHOD
In Large bowl, combine all your chosen ingredients (except 1 CUP CHEESE AND
TOPPINGS)
Stir well, if it seems too dry,(chips absorb liquid) add 1/2 water or so and
stir.
pour into large casserole
Add reserved shredded cheese evenly to top.
Bake about 350 until hot and bubbly
Let cool about 5 min,
add sour cream and olives to top
Or pass around at table
