Being mature means that you have no more consciousness of sins according to the passage in question.
Heb 10:1, For the law having a shadow of good things to come, and not the very image of the things, can never with those sacrifices which they offered year by year continually make the comers thereunto perfect (mature).
Heb 10:2, For then would they not have ceased to be offered? because that the worshippers once purged should have had no more conscience of sins.

To me being mature means I use the wisdom of Gods word and in doing so I am more conscience of my sin and seek the changes He wants to make in me to be more like Him.
However, as you become more sanctified by the Holy Spirit, there will be less sin in your life to be conscious of.

Paul put it this way,

1Co 4:3, But with me it is a very small thing that I should be judged of you, or of man's judgment: yea, I judge not mine own self.
1Co 4:4, For I know nothing by myself; yet am I not hereby justified: but he that judgeth me is the Lord.
