Waygu has it's own flavor and isn't for everybody. Some people love it and some people don't really like it.

Sounds great! Everything is better with bacon. That would help with moisture and browning .

Angus seems to me like it's a little bit more moist than Hereford.. One of my favorites too. Thanks for the recipe. I have a package of bacon in the freezer for a special occasion. The next time there's a good sale on Angus sounds like a good one.
