1 - What is the use of the sacrifices in the Old Testament?
The sacrifices was the man trying to get close to the Creator through His works. How our conscience and soul was contaminated by the sin, the law became infirm (Hebrews 8.3), that is to say, the human being started to use the Creator's law to try to amass boons and condemn those who oppose to their interests.
The idea is that people would see that, keeping our interests, it is impossible to approach of the Creator and hear His voice without being beguiled by the sin (James 1.13-15; Ezekiel 14.7-9).
2 - What difference does the sacrifice of Jesus do?
Christ came in likeliness of sinful flesh (Rom 8.3) and deliver Himself in the hands of sinners, so that everybody on the Earth and in the heavens could see how grievous is the sin, as well as the power of the divine love, which is able to endure such great affliction for the glorification of the Creator's name through the salvation of those he loves.
The sacrifice of Christ has the power of ripping the veil that covers the heart of those who accept to receive His salvation (see John 19.30 ; Matt 27.51; 2Cor 3.15,16).
If the person welcomes His word and open themselves to Jesus and His Body (Rev 3.10), He will work His salvation on a daily basis in us until our conscience is thoroughly purified (Heb 9.14).
Jesus, with His blood, bought us from ourselves so that, instead of living "by ourselves" and "for ourselves", we can live by confidence in Him (Hab 2.4; Rom 1.17; Gal 3.11; Heb 10.38), living off Jesus Christ (what implies on unimaginable and complete boons without pains - Pro 10.22; Eph 3.20; Phil 4.19) for all good work in favor of His people (Eph 1.3; 2Peter 1.3; 2Cor 9.8).
