Genesis 2:7 - "And the Lord God formed man of the dust of the ground, and breathed into his nostrils the breath of life; and man became a living soul" -- This is not said of the animals, and the creation of man was on a very different level than the animals and plants.
Animals are referred to in Scripture as having "the breath of life" as well as human-kind. Examples are given in Genesis 6:17 and Genesis 7:14-16 KJV in the account of Noah and the animals who boarded the ark.

Genesis 6:17 "And, behold, I, even I, do bring a flood of waters upon the earth, to destroy all flesh, wherein is the breath of life, from under heaven; and every thing that is in the earth shall die."

Genesis 7:14 "They, and every beast after his kind, and all the cattle after their kind, and every creeping thing that creepeth upon the earth after his kind, and every fowl after his kind, every bird of every sort.

15 And they went in unto Noah into the ark, two and two of all flesh, wherein is the breath of life.

16 And they that went in, went in male and female of all flesh, as God had commanded him: and the LORD shut him in.

Ecclesiastes 3:18-20 King James Version (KJV)

I said in mine heart concerning the estate of the sons of men, that God might manifest them, and that they might see that they themselves are beasts.

For that which befalleth the sons of men befalleth beasts; even one thing befalleth them: as the one dieth, so dieth the other; yea, they have all one breath; so that a man hath no preeminence above a beast: for all is vanity.

All go unto one place; all are of the dust, and all turn to dust again.

Scriptures where animals are held accountable for sin

Exodus 21:28-30 King James Version (KJV)

If an ox gore a man or a woman, that they die: then the ox shall be surely stoned, and his flesh shall not be eaten; but the owner of the ox shall be quit.

But if the ox were wont to push with his horn in time past, and it hath been testified to his owner, and he hath not kept him in, but that he hath killed a man or a woman; the ox shall be stoned, and his owner also shall be put to death.

If there be laid on him a sum of money, then he shall give for the ransom of his life whatsoever is laid upon him.

Leviticus 20:15 King James Version (KJV)

And if a man lie with a beast, he shall surely be put to death: and ye shall slay the beast.

Leviticus 20:16 King James Version (KJV)

And if a woman approach unto any beast, and lie down thereto, thou shalt kill the woman, andthe beast: they shall surely be put to death; their blood shall be upon them.

Exodus 19:12-13 King James Version (KJV)

And thou shalt set bounds unto the people round about, saying, Take heed to yourselves, that ye go not up into the mount, or touch the border of it:whosoever toucheth the mount shall be surely put to death:

There shall not an hand touch it, but he shall surely be stoned, or shot through; whether it be beast or man, it shall not live: when the trumpet soundeth long, they shall come up to the mount.

Genesis 9:4-6 King James Version (KJV)

But flesh with the life thereof, which is the blood thereof, shall ye not eat.

And surely your blood of your lives will I require; at the hand of every beast will I require it, and at the hand of man; at the hand of every man's brother will I require the life of man.

Whoso sheddeth man's blood, by man shall his blood be shed: for in the image of God made he man.
