You do not understand the Christian view of God´s immutability, IMHO.

The immutability of God, as used by ancient philosophers would prove that nothing new can be created. Thats probably your view (regarding covenants).

But in Christian meaning, it means something different. What is new from our point of view was eternally in the mind of God. God planned the New Covenant in Christ before Adam was even created.
