The yolk of an egg IS white.. that's the proper way to say it. :)
The word "are" would be correct if you said the yolkS of an egg ARE white. Yolks indicates MORE than one egg.

Elin, re-read my quote above. What you said here is precisely what I said there. :) I wrote the word "yolkS," indicating more than one, and I also put "are" which is also correct. :)
I know. . .I was pointing out the specific rule of grammar.

I might word the plural form as...

The egg yolks are yellow.

or

The whites of eggs are white.


The yolk of an egg IS white - IS NOT correct since yolks are yellow
