Made some really good banana bread with walnuts and it is so yummy......melted butter and warm......have not had or made it in a while....

10 tablespoons of butter plus 1 teaspoon - Yeah that's right unsalted BUTTER, everything is better with BUTTER.
2 Ripe mashed up bananas - Really ripe almost black skins....really black spotted skins.
1/2 cup Sour Cream - This helps make the bread really moist.....yum.
2 Large eggs
1 1/2 teaspoons Vanilla - Ah the flavor enhancer.
2 Cups cake flour or regular flour sifted - Always sift the flour gives it a very nice texture cake like.
3/4 Cup plus 2 Tablespoons of Sugar - Sweet is a very good thing.
1 teaspoon Baking soda - Got to get a rise outta the bread.
3/4 teaspoon Baking powder - Rise and shine on the bread.
1/2 teaspoon Salt - Have you ever made anything and forgot the salt....Yuck....Remember the salt.
1 Cup Chopped up Walnuts (or Pecans) - Use any nut of your choosing leave the human nuts out though.

Preheat oven to 350 degrees

Cream sugar and butter, add beaten eggs mix well, add vanilla, sour cream, bananas and mix well, set aside.
In sifter put flour, baking soda, baking powder, salt. Sift into wet ingredients a little at a time and mix well until all dry ingredients are added. Add chopped nuts mix well pour into greased bread pan.

Bake at 350 for 1 hour then insert knife if knife comes out clean it is done. Cool remove from pan and enjoy.
Oh, wowsers, banana bread.. you now have a friend for life!

true story:
when our youngest (who'll be 20 next week...sob, sob!)
was about 15, she refused eggs and anything containing eggs.
YOU'RE EATING THE BABY CHICKS! she would cry.

one day Mark pointed out to her those chocolate chip cookies she was eating
had been made with eggs.

end of teenage drama. :)

it's cold here, so, chili and cornbread, anyone?

Someone say chili and cornbread?

*Lynx perks up.

YEAH! Count me in!

Actually it's about time I made another pot of chili. Ground chuck, kiddley beans (I said kiddley diddle I?) spaghetti sauce, a little mustard and just a pinch of brown sugar... and then I look in the spice rack and think, "Hmm, this should go well in it" until it has enough seasoning. Usual spices are basil, oregano, cracked red pepper, garlic, sage, and maybe a pinch of curry. Maybe not.

i do the same! it's kinda like, maybe a splash of worcestershire and a few drops of tobasco?
never tried a pinch of brown sugar, though...but when reheating the pot, you bet i will!

do you make cornbread the southern way? (cast iron skillet?)

Brown sugar doesn't work unless you put some stone ground mustard in too. And just a very little pinch of brown sugar - not enough to make it even a little sweet, just enough to work with the tomato sauce, mustard and spices.

Now for deviled eggs, that's what tabasco sauce goes in. Mayo, a bit of tabasco, a bit of pickled pepper juice (don't laugh, it's good!) and a little dill weed.

that makes perfect sense...back when i wasted my time making my own spaghetti sauce,
i always added a teeeensy bit of sugar to it.

pickled pepper juice, eh? ;)
do i have to pick a peck of pickled peppers first?

I'm not sure that can pick a peck of pickled peppers...

Yes, please post the recipe! :)

I made a new kind of bbq chicken wings today.
Brined the wings in apple juice, apple cider vinigar, dried mango powder, and salt overnight.
The bbq sauce was made with crabapple jelly and a few other yummies and the sauce is amazing. :)
Hopefully the people I made it for will enjoy them, as I havnt tasted them myself yet, as Im afraid I might not be able to stop with just one and there will be none left for them. :p:)
But if they are well liked Ill post the whole recipe.

And mailmandan, please post the potatoe recipe, and those ribs look delicious!

Also, Hi psychomom! Missed you! :)

God bless
