I think God stayed away from any created type of symbol, because it would sooner or later
be used as an object of worship:
2Ki 18:4 He removed the high places, and brake the images, and cut down the groves, and brake in pieces the brasen serpent that Moses had made: for unto those days the children of Israel did burn incense to it: and he called it Nehushtan.

Exo 20:25 And if thou wilt make me an altar of stone, thou shalt not build it of hewn stone: for if thou lift up thy tool upon it, thou hast polluted it.
This also kept people from cutting symbols into the rock.
