God does not change. absolutely true.
However, ever heard of the NEW covenant?
God changes His relationship with His people.
For example the fact you are man will never change, but the fact you are married or single might.
Therefore the changes in the food laws does not mean GOD changes, just His laws about what we can and can't eat.
Jeremiah 31:31-34 "Behold, the days come, saith the Lord, that
I will make a new covenant with the house of Israel, and with the house of Judah: not according to the covenant that I made with their fathers in the day
that I took them by the hand to bring them out of the land of Egypt; which my covenant they brake, although I was an husband unto them, saith the Lord: but
this shall be the covenant that I will make with the house of Israel;
After those days, saith the Lord,
I will put my law in their inward parts, and write it in their hearts; and will be their God, and they shall be my people. I will put my laws into their mind, and write them in their hearts: and

I will put my laws into their hearts, and in their minds will I write them;"
That is the only Biblical definition of the New Covenant. Tell me, what statutes, judgements and laws would the LORD being attempting to write upon our mind and heart? We know what foreshadowed Christ; tell me how the Dietary Law foreshadowed His priestly ministry. Using your metaphor, while the man may be single or married, him being a man is still not negated by his relationship status.
