Many ways. There were more copies of the Bible found than any other ancient writing. Anything written after Revelation is automatically not scripture, because Jesus said scripture was completed, and not to add to it nor take away from it.

We know that the Old Testament is scripture because Jesus quoted from every book except Song of Solomon- which was found within many copies of the cannon. We know the New Testament is scripture because it spiritually matches perfectly to the physical things of the Old Testament. And it was written mostly through the apostles- whom Jesus command to pass on what He taught them to teach us.

You know scripture is from God because it has never been proven wrong. Though it was written through 66 different people, through thousands of years, it is flawless. A fifth grader can understand it, yet it takes Bible scholars years to even scratch the surface.

I myself have witnessed it change my life unlike any other writing.

There is no doubt in my mind.

You claim Jesus said scripture was completed, and not to add to it nor take away from it; do people who choose to add or take away from scripture face God's wrath?

Yes, its only a matter of when.

We can know because it has more original manuscripts then any other book in history and manuscripts that are with-in a couple of hundred years of the original. Where like the u'ran which has none or the sayings of the prophet in the hadith, that are proven wrong through science and common sense. Like the prophet said, "an believer eats with one intestine and a unbeliever eats with seven intestines" or "do not look up to the sky in prayer and supplication lest our eyes be snatched out". The story about the fish and the Jews is a real kicker. There's a village and the people fish the pond every day except the Sabbath, on the Sabbath the fish come up from the water and mock the people. So the people (Jews) decide to fish on the Sabbath, they catch fish and eat them. When they finish eating they turn into rats.

Do you think that's a holy book or the sayings of a holy prophet, the one that made me wonder if this is how we got the boogy man. "satan resides in the nose as you sleep" I not quoted any verbatim, but you get the idea. If someone is doutful I can quote verbatim and give the chapter and sura of where it is in the hadith.

Claiming to be the Holy Bible?
I don't think I've ever heard of such a thing. People will claim that certain Bibles are bad Bibles, but as far as I know, every Bible in existence was what it's translator thought was as accurate translation. How could someone convince Bible scholars that his fraudulent Bible was the real thing?

If said Bible has any contradictions or mistakes in it, then it is fallible.

Example:

John 3:16 (NIV)
"For God so loved the world that he gave his one and only Son, that whoever believes in him shall not perish but have eternal life"

Can you spot the lie?

God doesn't have "only one Son".

If that were true, then none of us will ever become Sons of God.

In addition...

Every reference to 'Sons of God' now has to be discarded as it contradicts.

First of all Jesus never said that, can you give the book, the chapter and verse where He said that?

What you are twisting is in the book of Revelation 20:18-19 "For I testify to everyone who hears the words of the prophecy of this book: If anyone adds to these things, God will add to him the plagues that are written in this book; 19 and if anyone takes away from the words of the book of this prophecy, God shall take away his part from the Book of Life, from the holy city, and from the things which are written in this book." Read it, it says nothing about Scripture being completed or any of your claims. What it is saying is, that the prophecy of this book, the book of Revelation, not the entire Bible.
Deuteronomy has the same idea in it, concerning the Command give in that book. 12:32 "Whatever I command you, be careful to observe it; you shall not add to it nor take away from it."

All bibles are useless unless a person can understand what is written.

Best thing to do is choose a version you understand and pray the Holy
Spirit will guide you into all truth.
