Can anyone tell me what his coat of arms means?

why don't all Popes have a coat of arms?

How is the coat of arms chosen for the Popes that have one?

What is the meaning behind the many hats?

Why does he ware red sometimes but most often in white?

Concerning the arms, this is a good read. There's a lot of information there, so I won't copy-paste it all here. According to this, every pope for 800 years has had one.
