I love that song, Waltzing Matilda, at first I thought it was about a girl named Matilda, but my dad, who has been a resident of Australia, told me that that wasn't the case...lol;)

Maybe a "CC Truth Thread" would be fitting? Anybody claiming to be the only one knowing the truth should be incarcerated in that thread for at least one week, and when they got out, they should be on parole with their very own parole officer...maybe stay in somekinda CC Halfway house before readmitting them to CC;)

It's thursday, its a lovely start to a lovely day... and Im already having coffee this morning. Good thing it's almost the weekend cause I have a LOT to do this weekend.

But in the meantime... I will just stay put and be thankful for what God has blessed us with. :)

Adding some lemon juice or vinegar helps.

Egg whites need to be heated up to a certain temperature in order to coagulate ("set").
Lowering the pH (increasing the acidity) of the cooking liquid is one way to lower the temperature required for coagulation of the egg whites. So, in a way, this does prevent "feathering" of the eggs, but not because of any direct reaction; rather, the reason the eggs feather less is because they have less time to feather, because they don't need to get as hot.

Any acidic liquid will have a similar effect. White vinegar is probably the most effective, but you could also add lemon juice or wine to the poaching liquid.
