Because they walk in spiritual darkness. The first chapter of Romans tells us that when they knew God they glorified God not as God but changed God into the image of earthly things. The third chapter of John tells us of men who turn away from the light and love darkness rather than light because their deeds are evil. John 3:18-21
Summed up it is because of the consequences of sin. Sin is more comfortable than truth especially to very religious people.

The Catholic church had to deify Mary to explain how Jesus could be born into the human race without a sin nature and never commit a sin. They didn't understand that Jesus was born without the sin nature because he did not have a human father. It is through the male line that the sin nature is biologically passed on to the child. Mary had a sin nature just like any other woman, she got it from her human father, but the woman does not pass on her sin nature to her children. So in the unique case of the birth of the savior, God caused a miraculous conception to occur by the power of the Holy Spirit, breaking the lineage of sin. Christ, in his humanity, as the son of Mary was a true member of the human race minus the old sin nature. Christ was therefore qualified as the lamb of God, without spot or blemish, to go to the cross as the sacrifice for sin. He is the Unique member of the human race and the only one qualified to bear the sins of the world.
I feel its because the people ruling the Catholic Church did not want God as their God. They wanted to be above God just like Satan wanted his throne to be above God.
For the last 1500 years the Catholic Church has been all about themselves and Mary and not for God. Why else would they make up the false Doctrine of Excommunication?

Roman Catholics believe many things about Mary that cannot be shown to be so in Scripture,
yet at the same time Roman Catholics will claim that they base their beliefs on the the earliest
Christians writers, who agree with them. This is blatantly false. None of the apostles, who were
the earliest Christian writers, ever mentioned the Roman Catholics heresies concerning Mary.
For instance, no apostle ever said anything about the immaculate conception of Mary.
No apostle ever said anything about Mary being sinless her whole life.
No apostle ever said anything about Mary needing to be sinless so
that Jesus Christ, the living Son of God, could be sinless.
No apostle ever said anything about the bodily assumption of Mary to heaven.
No apostle ever said anything about praying to Mary.
In fact, Jesus instructed us to pray to our Father in heaven.

I have heard many a Catholic say that Jesus has to obey Mary because she is His Mother. In fact many a Catholic Priest says this also.
What the Catholics have done is inserted Mary into the Trinity. Their thinking is if they honor Mary then God has to let them into Heaven. Its all about the Catholics being able to tell God what the Truth is and not the other way around. Just look at their Doctrine of Salvation. They actually believe and teach that Salvation is ONLY received by being in the Catholic Church.
This is how they control people from questioning their false Doctrines. Because if you question their teachings you will be Excommunicated and you will lose your Salvation.
Its nothing more than brainwashing and controlling the people for their own glory.

The deification of Mary came from the very early church which adopted many local pagan traditions including Xmas, goddess worship and so on. it evolved from there due to several factors.
1. Sex was despised by the catholic church, especially up to the middle ages. At one point the church had almost half a year of days where sex was not allowed. If you read about female Catholic saints almost all of them are claimed to be virgins, even the married ones. Rarely if ever is the chastity of male saints mentioned. Married saints have stories of how God preserved their virginity yadda yadda...why? They are lawfully married why would God care?
2. The early church fathers believed nothing sinless could come from sin. In their minds of Mary was a sinner then how could she give birth to sinless Jesus? Well she must have also been sinless! This of course creates two problems:
A: Why is God who is capable of rolling out the universe with a thought not able to put Jesus in a sinners womb.
B: Making Mary sinless only moves the problem one step back. How can Mary's sinful mother give birth to sinless Mary?
So we get...
3. The immaculate conception. The teaching that God set Mary aside from all others to be free of original sin inside her mother Saint Anne. Why God could set Mary aside and not Jesus is never explained.
4. The assumption of Mary: Since death is a consequence of sin how could Mary die? So they added the teaching that she just went to heaven without dying.
5. Mary remained a virgin her whole life, despite the bible itself saying she had other sons. Catholics have tried to twist this to mean stepbrothers or cousins. No linguist agrees with them and the original text clearly means blood siblings. The try to say Joseph was a widower, already had kids, was only marrying her to protect her precious precious hymen. All ridiculous. The bible says that Joseph did not have sexual relations until Jesus was born. Catholics try to change the meaning of "until" to not mean something changed. If she was a virgin her whole life then why would the bible both to point out she was until Jesus birth? it would just say she was a virgin her whole life and leave it alone. The reason this is important is because the Catholic clergy, a group of celibate old men still have their medieval attitudes towards sex and see it is something shameful. Since they venerate Mary so highly they don't want her to have had sex because in their minds it would dirty her up.

You have to fuse two female ovum in a lab. You would also have to tweak one of the moms cells to look like a dads in order to prevent certain birth defects. This has been done with some success in mice, therefore doing so with people is possible if not reliable or safe.
