Why would earthly parents procreate and have children knowing that their children may choose to be evil and go to hell?

The problem is, parents are not omniscient. God is.
The parents have no idea how the child will turn out.
In contrast... God knows. And, allows them to live anyway.

Why?

Well, Jesus could not know the time of the Second Coming and still be God the Son.
That's what I just said.

The Son, in His incarnation, could not know things and still be God. @Believer08 asked if the Father could do the same. After rethinking it, I don't think God the Father could not know which is why He created through, by and for the Son. If Jesus could be entrusted with our salvation in His humanity, why not our creation?

Being omnipotent is also helpful. Mortal parents are helpless to do anything ultimately, not so with the Lord.

The Father never had a human existence; only the Son did. Perhaps "Spirit only" is a better description than "Deity only".
Then how does that separate him from the Holy Spirit, in terms of language? The Spirit isn't the Father and vice versa. There is a thought the Spirit also has a dual nature, ie. Deity and angel, hence the angel of the Lord.

Deity simply translates to "god" and as all three, Father, Son and Spirit are God and spirit doesn't translate to god, I think Deity is a better option. :)

Well, Jesus could not know the time of the Second Coming and still be God the Son.
That was only a temporary (volunteered) state of being.
For before he could qualify to die in our place, he first had to prove himself able to withstand all the temptations we fail to resist.

For we do not have a high priest who is unable to empathize
with our weaknesses, but we have one who has been tempted
in every way, just as we areyet he did not sin." Hebrews 4:15

Once he proved himself to be a lamb "without spot or blemish" ...
He then was sacrificed as our substitute on the Cross.

THEN!
After paying for the sins of the world?
He no longer needed to remain as a man.
So, after he was finished, he ascended back to heaven.
When He ascended he was glorified, and RETURNED to heaven to his rightful function as God!

For in Christ all the fullness of the Deity lives in bodily form,
and in Him you have been made complete . . ..
He is the head over every power and authority. Colossians 2:9-10

We are in for something too big for our tiny brains at present to contain....

Why is God on trial, and not man?

God is misunderstood because of a lack of knowledge by men.

Ignorant men may think they have God is on trial, but they are the ones who will be judged.

God will allow for them to take their presumptions and accuse Him...
But, no one can judge God.

Its the same kind of pattern of presumptuous accusations of fallen men that put Jesus on the Cross.
But, it was God who judged our sins on Christ.
No man judged Him.
