I just got done baking two batches of persimmon bars for my office peeps because I stupidly promised to make them treats for our meeting tomorrow. I was given a bunch of the cooking kind of persimmons and several were already overripe and would go bad soon.
I got very experimental - I made a cranberry paste which I spread on top of the bars. I tasted one...okay...two....and they are amazing! Except...
...their appearance. The cranberry paste makes it look like I spread some sort of tomato based sauce on meatloaf.
In the morning, I'll swirl a glaze over it and sprinkle with pecans. And once cut into bars, they will look more appealing - I hope.
