Depends on the dish. In a tomato sauce for pizza: LEEK!!!

Yesterday I made a yummy sauce, to serve with pork. I started with slightly frying onion-pieces, then adding some smaal bacon-blocks. Beef fond, cream and some red wine. Mmmm :D

I like spicy! Some dishes requier less spices, like a well cooked cod. Maybe a little pepper and salt, but not too much.
