Only the background is CGI. The camera cut twice as you are watching him play with the water and the cloth. It cut twice because the dive plane they are filming this in can only sustain zero G for around 30-60 seconds.
A CGI background and a dive plane with camera editing is all it takes to deceive you, and to film 'Gravity'.

You see how he is sweaty and worked up in this one? They were probably messing up the recording over and over as he was trying to get his lines out, manipulate the rag, and sync both of those up with the plane dives.
They are always very very careful to when manipulating objects during the Zero G dive effect, they never let anything get too far from there hands or bounce of the walls or freely move about because it would become too easy to see it for what it is.
They do Zero G dives, or segments with regular Harnesses that they edit the wires out of.
In this video you can clearly seem them manipulating their harnesses and wires.

Not on the first or second take, that's why Chris Hattfield is so worked up. Eventually when everything is stable you can make a straight enough looking line on the Zero G Plane dive.

This is completely made up chat, he says people are grabbing wire, there's no wire being shown in the vid, and he said the key thing there's nothing there no wire hahahaha... It just made up talk to try and rebuke something. Nothing busted wide open, there is no wire in the video.
