I would say - because their goal is to give us a record about Jesus and his life.
Although the writers of the synoptic gospel never used the word in their gospels, John used it three times—but never in reference to salvation. In the “record about Jesus and his life,” He never used the word. Therefore, the ‘gospel of Christ’ has nothing at all to do with grace. Indeed, when he was asked by men what they must do to “inherit eternal life”, He replied,
Mark 10:19. “You know the commandments, ‘DO NOT MURDER, DO NOT COMMIT ADULTERY, DO NOT STEAL, DO NOT BEAR FALSE WITNESS, Do not defraud, HONOR YOUR FATHER AND MOTHER.’”

That is a funny statement! He didn't have to say anything about it because He showed it by His actions. His death and resurrection for us was an act of mercy by God on our behalf, a salvation and atonement we were/are completely unworthy of. We are saved by grace through faith.
His life is a representation of God's grace. Who earned their healing from Jesus? What of the five thousand fed with multiplied food? How about when Jesus allowed a woman caught in adultery to not be stoned and didn't condemn her? The ear restored of the soldier (that got cut off)? Most importantly here, what of His death upon the cross?

I believe the OP has a valid point. It is not just the issue of not using the word but the concept of what we understand grace to mean, the unmerited favor of God. It would seem that the gospels would ooze grace from every page but it does not. Yes, the underlining of grace is there but much of the gospels speaks of the call for faith and obedience. Much of His parables and beatitudes focus on our proper response to God and not the unearned favor that is grace.How do you know?
