Hi everyone,
So I watch my 2 year old boy for 2 hours M-F before my wife gets home from work, so I was thinking, if I could find some nice quick recipes, not too complicated and definitely tasty, I could prepare them and we could all eat together as soon as my wife gets home. So I figured I would ask my CC family from all over the world for ideas. Remember, I'm not a chef, and our son loves to help out in the kitchen but not for long (you know kids :)). So please share some of your favorite recipes, I'll try to prepare them so long as I can find the ingredients around here. Thanks, God bless you!

Spaghetti with sun-dried tomatoes and fried crispy garlic


INGREDIENTS
Spaghetti (angel hair) 250 grams this is for 2-3 people.


1/4 cup olive oil

5 cloves of garlic thinly sliced

7-10 pieces of sun-dried tomatoes (i love Thai sun-dried tomatoes because it is a bit sweet

Spam luncheon meat ( I don't eat pork but I eat luncheon meat :D sometimes maybe once in one year) get a knife take maybe 4 slices and divide each into small quarters (small square-like shapes)

salt and pepper to taste.


METHOD


1• deep fry garlic slices until golden brown(don't burn) same with the sun-dried tomatoes but don't make the tomatoes crispy just fry it for maybe 1-2 minutes. Next is the luncheon meat do the same..fry until it is golden brown but not too crispy...drain the oil and set aside.

2• Cook spaghetti in a large saucepan of boiling water...don't boil the spaghetti for too long because Angel hair spaghetti is very thin.Make sure the pasta is "Al dente".


3• Drain pasta

4• Heat up the frying pan and add olive oil use the oil u used in deep frying the sliced garlic. Add the drained spaghetti add salt and pepper to taste(don't cook too long) dish out. Add the fried garlic,sun-dried tomatoes and spam luncheon meat. Toss until well combined and serve.


take note: you can toss garlic,tomatoes and the luncheon meat until well combined with the pasta or you can serve the pasta topped with garlic,tomatoes and luncheon meat.

When frying the luncheon meat Don't deep fry the luncheon meat because as far as I know it has oil already and only a little oil is needed to fry the meat. less oil is good and healthy.

You can also exclude the luncheon meat and just toss it with garlic and sun-dried tomatoes but since your kid will also eat it add the meat for the kid to enjoy the dish more.

You can add more garlic too they more the better 😄 I love garlic but again I don't know if you and your family love garlic..if no...just stick to 5 cloves.

I had it yesterday and it was delicious 😄 I wanted to prepare again today but I worry that if I eat too much garlic nobody will dare come near and speak with me 😂😂😂

If you’re home early enough try my beef crockpot casserole I just posted. If you’re home around 1-2pm you could do this one easy. It’s not too hard either. You just fry the meat slightly then chuck all the ingredients in a crockpot then into the oven while the time cooks it to perfection. You can be flexible with it too. If u can’t find all the ingredients cause I’m in Australia just supplement with whatever is good for soupy casseroly type foods ok!

What time of year is it where u are? I could give u simple recipes but it’s winter here so I’m not sure what season it is for u to recommend appropriate recipes?

The secret to finding super easy recipes is to find kid's cookbooks- either at the library or online, Pinterest would be a good place. These are great for beginners or for those who don't have much time or much ingredients. I'll give you one right now that is as easy as pie...

Chicken Pot Pie
1 small package of fresh boneless skinless chicken breasts or strips
1 small bag of frozen mixed veggies (corn, carrots, peas, green beans)
1 potato
1 small can Campbell cream of chicken soup
A little milk
1 Pillsbury pie crust

Preheat oven according to pie crust instructions. You want to cook the bottom crust half way before adding filling. Set aside.

Fry chicken in pan with butter over medium to medium high heat- you want a golden crust but the middle cooked thoroughly. Cook until meat thermometer is up to temp, or until it is no longer pink in the center. Dice chicken when cool enough to handle. Set aside.

While chicken is cooking, dice potato and boil in water until you can stick a fork into it. Drain and set aside.

Also boil veggies for up to five minutes, you just want them hot. Drain and set aside.

In a large bowl scoop out soup mix. Do not make the soup according to the instructions on the can. Stir in enough milk to thin the soup just enough to be like thick gravy rolling off your spoon (about 1/4 or 1/2 cup, it's been a while since I made it).

Add chicken, veggies, and potatoes to bowl and fold them in gently until mixed.

Pour mixture into pie shell, cover with top pie shell, and pinch the edges together with a fork or your fingers (if cooled down enough). Cut a slit in the middle of the top, and bake at 400 degrees for about 20 minutes, until top crust is golden brown.

TIPS

Putting an oven-safe pan of hot water on the bottom rack below your pot pie will help the crust edges not burn before the middle is golden brown.

You can cut pie shells or use crescent sheets to fit a cupcake pan to make individual pot pies. Or you could make them like hot pockets on a cookie sheet.

You could use a cookie cutter on extra crust dough to make a topper decoration for your crust- like the shape of leaves for an autumn dinner, using a toothpick to make the marks on the leaves, or something fun for your kid, he might have fun making that part himself.

I love pasta and sun dried tomatos I use that on scrambled eggs Mmm!

Hamburger Strangonoff
[ this is real fast and easy and makes a huge bowl ]

- 2 lb of Hamburger meat. [brown it in a skillet on low] set aside.

- egg noodles . Cook how long the bag states. its usually 10 -15 minutes ] after it cooks, drain this in a strainer to get rid of the water

- Add 2 cans of cream of celery soup or cream of mushrooms whichever your family will like

- add salt

- add the browned meat to all the above.

[ this will be an easy fast dish ]

CHICKEN CASSEROLE

If you want to make it fast, run to the nearest restaurant and get 2 or 3 chicken breasts already cooked to add to the rest.

- 2- 3 [ according to the size, if really large like split breasts use only 2] = Chicken breasts
- 1can = cream of chicken soup
- 1 can = cream of celery soup ( mushroom soup can be used if you desire)
- 1stick = Butter ( or margarine )
- 1box = Stove top stuffin mix [ empty box in , do not cook first
- 2 cups - chicken broth ( you can get this near the soup isle, swanson in the can is best tasting

~~~~~~~~~~~~~ Boil the chicken breasts until tender, . Pick off meat from the bone... then mix, soups, butter, stove top stuffing, and 1 cup chicken broth in casserole dish. [ cake pan size, I use a glass casserole dish]
Pour 1 cup of brother over the top of mixture after its put in the casserole dish.
Bake 300 for 1 hour or until light brown

Potato soup is easy and fast.

boil potatoes [cut up in small cubes ] after about 10 min of boiling........test with a large spoon that has holes in the spoon, to see if the potatoes are tender . and then proceed to mash potatoes with a fork while they are on the large spoon with holes. ……. don't mash like mash potatoes, leave some lumps, ….when all potatoe cubes are found and mashed, put butter in ( or margaring, I use a lot, like 4 tablespoons.) salt , pepper and its done.
