3 large eggs
1 spring onion, finely sliced
Pinch of salt
Pinch of black pepper
Knob of butter
Dessert-spoonful of sour cream
Dessert spoonful fish sauce

METHOD:
Non stick pan. Medium heat. Let it heat up before cooking.
Crack eggs into hot pan. Stir with spatula, scraping egg from bottom to avoid any burning. Periodically remove pan from heat if the egg is solifying to the bottom of the pan quicker than you can scrape it off. Cook eggs until they are hot, but still moist (you don't want them dry. You want about 10% liquid egg, still).

Remove from heat.

Stir in your butter. Once it is incorporated, add the salt, pepper, sour cream, spring onions and fish sauce, and mix in.

Serve .

Not big on fish so probably would omit the fish sauce...otherwise we're good to go (y)

I'm not a bit fan of fish sauce, actually. It is too "odour of the sea" for me. But it is brilliant in this.

i know fish sauce adds a special "something" that isn't 'fishy", I look forward to trying this.

I'm not a bit fan of fish sauce, actually. It is too "odour of the sea" for me. But it is brilliant in this.
May try but still not convinced I should.

"Umami" I think is the name for the flavor fish sauce and a few other things add, it is an "official new flavor" from what I read.

That's it. You can get it from other things: mushroom extract, and asafoetida have the same quality. But I just find fish sauce works better.

Did you ever try and find asafoetida? Looks like you appreciate some of the nice flavors available to us of a more refined palate???But there is something to be said about sensitivity of the senses. However the recipe this was associated with sounds like overpowering amount of fish sauce. BUT??!!! The first time I ordered Greek style pork chop and was presented with what looked like a broiled mass of some type of weed and then told it was coated with Oregano I was certain it would gag me. Incredibly delicious!!! That was in California and here in Illinois restaurants all skimp on the Oregano. Still good plus it may also require a certain kind of olive oil?? Had to ask about the asafoetida as the Wiki article says it is related to one of my favorite flavors, celery. And celery reminds me of a Persian way of preparing chicken. Tasteeee.

Also I heard some classy restaurants put an extra egg yolk in their scrambled eggs, I need to try that. Also, a cook at my church can't go on enough about the nutrients in celery juice. She has more than a page of ailments it remedies, esp dealing with mental faculties such as dementia with much more. It's like penicillin or something in a celery stalk, lol.

Celery is excellente' !
I have some this week.
Next spring I should grow a lot of it. It's a nice addition to any recipe. Rather than juice it, I like to give my teeth as much crunchy food to chew as possible. High in fiber too.

Long, long ago in a..........Persian (Iranian) friend on picnic chopped lots of celery up in wok and cooked chicken parts. Very tasty!
