God has given the choice to us. Its his sovereign choice to do this. He knows what he is doing . He's not afraid by our choosing.

Why not just go with what the scriptures actually say? No outside influences.
Galatians 4:9 But now, after that ye have known God, or rather are known of God, how turn ye again to the weak and beggarly elements, whereunto ye desire again to be in bondage?
So we weren’t predestined to be adopted until we believed. It logically follows He knew He was going to adopt us before He chose to adopt us. Interesting.
If you think God didn’t know we would be saved before we were saved, that is open theism.
If you want scripture about Gods perfect foreknowledge, start in Isaiah 42 and read until you find the passages. I tthink it’s like chapters 42-46.
God doesn’t know you as one of His until you believe the gospel.
The moment I believed the gospel and was placed in Christ, God predestinated my future. My future is the adoption which is the redemption of the body.
Absolutely, God knows our hearts, our motives our thoughts.

I don’t see it in Scripture. If scripture says it, then I believe it. I try not to read any preconceived beliefs into scripture.
