I have not baked a cake for some time :unsure:

Chemo robbed me of my craving for sweets :censored:

Which, really, is not such a bad thing ;):D

Since I am not very physically active, so all those extra
calories are not really required, and I am slowly losing
weight, which really is a good thing :D Though I did
recently buy one of those tubs of 2-bite brownies ;)
It took me two weeks to eat them all LOL Yum!!! :giggle:


PS~ my chemo is now finished :cool:

Yay!!! that’s a major praise to the lord right there! So happy for you!! I may bake brownies With my mom. She’s coming over today to see the grands... so maybe she and i can bake something special for the littles ☺️

Sounds like a good plan :) I have a few times cooked a large pancake that requires two sittings to finish :D I found it was just as good if not better to cook one large one than two smaller ones -one after the other- in the same frying pan. I add banana, and also added in some bran muffin mix (and reduced the flour and baking powder accordingly), which increases its nutritional value. :D I have some Lady Godiva 72% dark chocolate here, that a couple in my church fam gifted to me. I think I will make one of those banana bran pancakes today for breakfast, and add some chocolate to it :D Speaking of my church fam, they have been absolutely wonderful while I was undergoing treatments, delivering meals to me sporadically, which makes a nice change from my usual :D One couple delivered a 7" X 14" pan of lasagna to me! Oh my goodness, I was eating lasagna for days, but yummy yum yum, I love lasagna :giggle: nd, hey ain't nothing wrong with lasagna for breakfast hee hee :)

Pancakes are super easy to make! It is just flour, baking powder, an egg or two (depending on the amount of flour you use - one is sufficient for my large pancake) and some liquid, like milk, and maybe a bit of oil (or butter) and salt? I usually substitute apple sauce for oil. It sounds crazy but works wonderfully well in any recipe :D Also, many recipes are somewhat forgiving when it comes to amounts, and I am prone to experiment, which, haha, means it is hard for me to duplicate my roaring successes LOL. But it's all good :D Here (<- link) is the basic recipe I found and followed to make my pancakes :) No sugar is really required when you add fruit ;) And you can add maple syrup to the batter as well :D

I was thinking about doing some baking this weekend... haven't done much cooking all week that requires any real time. Been reading and trading...the sitting around all the time is really annoying when I'm used to walking, climbing, carrying materials and generally being active all day.

A nice (and easy) Valentine's cake can be made by baking two one-layer cakes, one in a square pan, the other in a round pan of the same width. Once they are cooled, halve the round cake and place each half on either side of the square. It forms a heart shape! Then ice the heart and maybe put some icing writing on top, something short and sweet :) The cake can be any flavor you want, chocolate, vanilla, lemon... and pink icing is nice, with either white or darker pink/red writing :) You could even add little icing flourishes around the edges also LOL :D

Because such a cake is quite a bit wider than most cake plates,
you may need to serve it on a bread board or something similar ;)


Another Valentine cake idea is a rich chocolate bundt cake with cherry
pie filling.
Separate the cherries from the syrup to add to the cake batter,
and then use the syrup to drizzle on the cake or add to the icing :D

You are quite innovative :) I experiment but am pretty basic...

Another idea: Instead of using icing sugar to make your icing, you can use sweetened sour cream. Ha, yes, another of my crazy experiments, but it works wonderfully well, especially for heart-stopping cheese cakes, which are often already quite high in fat content, because I refuse to use low/no fat cream cheese or sour cream. A 250 gram tub is usually enough to top a cake; you can add melted chocolate to it for chocolate icing, and a touch of sugar if the chocolate you use is very dark, which I would recommend :D After topping the cake with a sour cream mix, refrigerate for a little while so it can set a bit. Oh, and the sour cream topping is best on flat cakes due to gravity ;):giggle:

You could add melted chocolate and the cherry pie syrup
to a sour cream topping if you are icing a flat cake :D

Wow! None of my cakes have ever looked that fancy :giggle:

Oh, speaking of cheese cakes: a cheese cake would also make a nice Valentine cake.

Who doesn't like cheese cake? And it is quite simple to make, though can be a bit pricey.

The one I have made again and again for special occasions (used to be a Christmas fave)
was a white chocolate cheesecake. The recipe called for a kilogram of cream cheese
(four 250 gram packages brought to room temp.), a half pound of butter (also room temp
or melted), four eggs, and 12-16 ounces of white chocolate, also melted. The recipe also
included sugar, but very little - or even none - is required with all the white chocolate.
After blending all the ingredients thoroughly, it is baked in a spring-form pan for 30
minutes only at 350* F, and will look loose when removed from the oven. This cake

requires a full 24 hour refrigerated cooling before removing from the pan. The cream
cheese mix
is added to a cookie crumble base that you bake for 10 minutes while
mixing the other ingredients. Often a graham cracker base is called for, but I would
instead crush shortbread cookies and chocolate wafers to make a chocolate base for
the chocolate cheese cake :D The cake is quite heavy and the base is very solid once
the crumbled cookies are mixed with a bit of butter and extra sugar and baked.


I would top this cake with the sour cream and chocolate mixture over top of fresh raspberries :D

Now to be fair and honest my drawing is horrible. Which making a butterfly is basically.

So I lay a coloring book butterfly page down on the granite/marble and then a piece of waxed paper on top of that and carefully trace them out.

I make the two wings...then once soft set take them off and set them in the corner of a box and glue them together with more chocolate.

You have to make dozens and dozens of them because they are so fragile you will break a bunch of them long before you get them on the cake.

It seems counter productive to aim for a dozen butterflies to get three or four...but the effect is more than worth it.
