Oh no kidding! I was crying about it....but a little over a dollar a pound is a steal. The cryovac had lost its seal and so it was deep discounted to just get rid of it because most grocery stores don't have a meat grinder anymore. I can fly through 15lbs of meat and not even breathe heavy. 5lbs will only make 30 meat pies.

And considering all the buzz we got going....I'll use all of that opening day.

Brisket makes a fine 73/27 burger....I just call it 70/30. Chuck makes 80/20 and is what most burger and restaurant places use.

The oven we inherited is a POS oven....it's gas but ventless so it's not anything I enjoy using. It's slow and underpowered. I've underbaked everything I've put in it so far. The proof box is overpowered and it's trying to bake these English muffins I got proofing.

I'm gonna go for a loaf of sourdough Pullman here in a bit. I got cookie dough/pie crust done already. I guess I need to whip up some honey butter here in a bit. Then some tart shells.

The meat pies yesterday were a hit. The manager at the burger&beer joint next door said it gave him goosebumps as he shoveled it in as fast as he could.

Boy howdy am I nervous though....Hopefully I can get the volume of stuff baked I need to fill these cases and racks. One small POS oven and not my real bakers oven. A couple of small mixers and not my big one.

Currently we are waiting on contractors and codes.

your right, it would be too much of a headache having to explain... we're talking about the other definition of coup, as in 'a notable or successful stroke or move' over and over again.

Exactly. It would be like Universal Greeting time, the internet chat convention whereby whenever someone comes into chat it is "morning" and whenever someone leaves chat it is "evening."

It was invented to cut out the static caused by someone coming in and saying "good morning" and everyone else comparing relative time zones. But instead of comparing relative time zones, we all started explaining Universal Greeting Time over and over. :rolleyes:

Instead of explaining "coup" (as used in this context) over and over for the entire lifespan of a coffee shop, better just get a different name.

Sourdough takes longer than store-bought yeast. Much longer. If you make anything sourdough, you got no time to make your own butter.

Actually we are debt free. This is being done with cash.

BUT....
It should be profitable soon. Our rent is reasonable and if we can keep labor within reach....we should do ok. We aren't going to get rich by any stretch of the imagination but we will make a decent living.
